Thank you for your awesome recipes and videos. My husband is enjoying me trying them out and has loved everyone one so far. I live in a small town in central queensland (australia) and is hard to find fresh young ginger, should I just use less old ginger?

Hi. Thank you for the tutorial. I don't take wine. Any substitute for it or can I do away with it?

Mohammad Faidz Sulaiman

Can I skip the cooking wine or any non alcoholic replacement for it

Did you use purple onions or brown onions? Purple onions would have made it a little spicier? Can I skip the cornstarch if I prefer the texture of the beef to not be too slippery? Thanks

Thanks for sharing this great recipe in such a clear and easy to follow instruction. I have a question:
What is the purpose of the baking soda for the marinate?
