Marion, may I ask what temperature you may have the for the initial introduction of the beef in the pan please (roughly)?

The secret to Chinese cooking is as Marion shows: first, tenderize the beef, and second use brown sugar in the sauce. Without those, it just tastes bland and the meat is tough.
