    Just watched the chicken Vesuvio show. Or as my Italian family calls it, chicken in the oven with potatoes. A week day dish. If you put the dry room temp chicken in the oven at 450 for the first 15 mins and lower to 350 after, you can skip the stove top nonsense. Also please tell your cook who used cottage cheese in place of ricotta I said, eh no!

    They need to explain that browning chicken in an overcrowded pan, you need a good quality cast iron skillet. Otherwise it want work. I either use my Lodge or Le Crueset

    I wonder why so many of your meat dishes use butter. It would be helpful if you would indicate what could be substituted for the butter in the recipes for those of who cannot use meat and dairy together and those of us who are trying to reduce the amount of fat in our diets. I would love to try this recipe as I love chicken cooked with lemon, but could not.

    I have three of America's Test Kitchen's cookbooks. If you want recipes that have been thoroughly tested, with explanations as to why they work, I'd suggest you buy their cookbooks.

    Growing up we only had 3 channels on our antenna TV. The only one that came in really clear was PBS, which test kitchen aired all the time. I fell in love with cooking watching you all in the test kitchen. This is the first place I come when trying new recipes or refreshing my mind on old favorites. When in conversation with others I always tell them if you want to get the best technique for any dish go to Americas Test Kitchen! Love you ladies thank you another great recipe!

    1/2 cup of "table" salt in 2 quarts of water is waaaay too salty. Perhaps I'm doing something wrong. I have ruined 2 batches of chicken trying this. When you go to their website, they make you pay for a membership in order to get the actual recipe which is rediculous. Sorry but the salt and water ratio is way off on this recipe. Good luck with this salty hot mess.

    5:06: I always let cooking videos run as I am cooking. Today, I was making pan roasted chicken breasts. Just as you mentioned this garnish, I thought: “Oh, I have some Italian parsley and lemons”, and (wait for it!) …a new micro plane. My garnish turned out beautifully😊. Thanks, folks
