A perfect roast, thank you. Usually in videos, the meat is so rare it's still mooing. Yours was pink and juicy, with the center slices medium rare. Just perfection!

horrible way to well done…THE BEST prime rib= 500 degrees lbs x3 min = then turn oven off let in oven 2 hours DO NOT OPEN OR TOUCH THE OVEN… REMOVE NO RESTING AND CARVE PERFECT RARE PRIME RIB… WANT IT MORE THEN 5 MIN X LBS @ 500 AND TURN OFF…NEVER FAIL !!!!

You seem to be in the minority on this…compared to other chefs opinions, I understand about food safety, but, I’ve been cooking 55+yrs and never cooked cold/seasoned meats. I’ve never had any food poisoning. Anyway, different strokes for different folks. Peace👍🏽

Just my opinion – might be better to spend $20 and buy a wire thermometer and cook to desired temp and not worry about app. MaAatt Daaamon.

In my opinion you should not cut off the tail. When you slice it into servings you can take slices of the tail with slices of the meat and you get much more flavor since a lot of the flavor is in the fat. Just my two cents though.
