Today’s Recipe
Masala Brown Rice

200gm cooked brown rice
1 tbsp cooking oil
1 tsp mustard seeds
1 tsp methi seeds (fenugreek seeds)
10-12 fresh curry leaves
1 onion chopped
1 green chili
2 tomatoes puree
1/2 tsp turmeric powder
1/2 tsp kashmiri chilli powder
Salt to taste
1 tbsp ginger
1/2 tsp garam masala
1 tbsp chopped coriander leaves
2 tbsp green onions chopped

– To make the masala brown rice, heat oil in a heavy-bottomed pan. Once the oil is hot, add mustard seeds and let them crackle, add methi seeds, add chopped green chillies, onions and cook them till the onions are soft and translucent.
– Once the onions are soft, add curry leaves and tomato puree, cover and cook for about 5 min.
– Add salt to taste, red chilli powder, turmeric powder, salt to taste and mix well
– Add ginger slices and mix well. After a minute, add the cooked brown rice and mix everything well. Add spring onion, coriander leaves and let rice cook for 2 to 3 minutes more.
– Once done, switch off the gas and garnish masala brown rice with spring onion greens and serve hot.
