Made with bell peppers, frozen veggies. minced mushroom, and Japanese curry roux, this easy stir fry takes day old rice to a whole new level of flavors! This recipe is customizable and you can incorporate any vegetable or plant-based protein you have left in the fridge! The Japanese curry gives it a sweet, warm taste that makes it so sumptuous and enjoyable!
4 cups day old rice
1/2 white onion chopped
1 green bell pepper chopped
200g frozen veggies
1 cup frozen minced mushroom
4 tbsp melted Japanese curry roux or to taste (add a bit of warm water to prevent from drying)
1/2 tbsp curry powder
1 Heat about a tablespoon of oil in a pan over high heat until smoking. Sautee onions for 4 mins until slightly brown. Add the mushrooms and cook for another 2 mins.
2 Add vegetables and cook for 2 minutes. Add the bell pepper, rice, curry roux and curry powder. Continue sauteeing for an additional 3 mins with occasional stirring. Let the rice sit for a while in between stirs so the bottom becomes crisp.
3 Remove from heat. Taste and season with salt and pepper as needed. Serve while warm.
