Chili con Burrito (Vegan) | PlantBased & More



A fun way to serve up Vegan Chili con Carne – roll it in a burrito! You’ll love that they’re super tasty, hearty, and only need 7 ingredients to make! Better make a big batch ‘coz these disappear fast!

The Vegan Chili con Carne is the star and flavors the entire dish, bell peppers add crunch, while the cilantro adds a pop of freshness! We used a spicy mayo dressing to dollop these burritos but you can also use vegan sour cream or yogurt! Yum!

INGREDIENTS:
1 cup vegan chili con carne
1 cup cooked brown rice
85 grams / 1/2 cup each green and red bell pepper sliced thinly
Salt and pepper to taste
2 tbsp fresh cilantro leaves
3 Tortillas large
Spicy Mayo (vegan mayo mixed with Sriracha, optional)

PROCEDURE:
1 Heat oil in a skillet over high heat. Add onion and cook for 2 minutes until lightly browned. Add bell peppers and sautee for about 3 minutes. Once the peppers have softened slightly, set aside.

2 In the same pan, add the chili con carne and cook, breaking up the large “meat” pieces into smaller pieces. Add the brown rice and stir well to combine. Set aside

3 Assembly: Place a tortilla on a work surface. Spread spicy mayonnaise on the tortilla then place 1/4 – 1/3 cup of the rice mixture just below the center. Top with bell peppers and cilantro leaves. Fold up the bottom to cover the filling then fold the left and right edges in. Roll up tightly, then wrap in foil. Serve as is or heat in a pan.

4 Cut burrito in half. Serve with spicy mayo on the side and enjoy while warm!
