YOU CAN COOK Friday Recipes: Sweet Potato & Black Bean Burger

RECIPE // Sweet Potato & Black Bean Burger


– 300 g mashed sweet potato
– 225 g cooked brown rice or quinoa
– 185 g cooked black beans or from a can
– 3 spring onions chopped
– 50 g walnuts chopped finely
– 1-2 tsp ground cumin
– 1 tsp smoked paprika
– ¼ tsp salt and pepper


– Red onion slices
– Tomato
– Lettuce
– Vegan cheese
– Mayonnaise
– Ketchup
– Burger bun


– Heat over to 200 degrees. Place whole sweet potatoes on a baking tray In oven to roast 30-45 minutes until soft.

– Cook the rice as per packet. Chop the onion and the walnuts.

– Drain the beans and add to a bowl mash with a fork until a bit broken up. Add in the spring onions, walnuts and spices

– When the sweet potato is cool enough to handle scoop out 300 g of the insides and add to the bowl. Mix and add rice the mix will be soft but stick together. Use clean hands to mix it together well.

– Turn oven down to 190 degrees. Line a baking tray with baking paper. And use a little clingfilm to line a burger sized jar top. We will use this to shape the burgers. Place 4 big or 6 small on the tray and then cook for 30-40 minutes in total. Carefully flip after 20 minutes.

– Serve on a burger bun or on a bed of lettuce

– Top with your favourite toppings: tomato. gherkin, red onions, cheese, ketchup.. etc.
