Sheet pan meals are actually amazing and one of my favorite methods of cooking! These work great for both lunch or dinner and come together quickly with light clean up after. *T Y P E D. R E C I P E S*
Chicken & Veggies:
4 medium sweet potatoes diced
1/2 red onion diced
1 sliced lemon
1 LB Brussel sprouts cut in half
4 tbs olive oil
2 cloves minced garlic
Dash of nutmeg
Salt and pepper
1 tbs red wine vinegar
1 tbs apple cider vinegar
Dash of red pepper
3-6 boneless skinless chicken thighs
Veggie: Add all of the vegetables to a large bowl and add 2tbs olive oil, 2 cloves minced garlic, dash of nutmeg, dash of salt and pepper, and 1 tbs red wine vinegar stir all the vegetables together
Marinade for chicken: add 2 tbs olive oil to a bowl, 1 tbs apple cider vinegar, dash of red pepper flakes, 1 tsp paprika and garlic powder, dash of salt, pepper, and sage.
Add the chicken thighs into the marinade mixture coat the chicken in it.
Place the vegetables and chicken on a cooking tray. Bake on 450 degrees for 30-45 minutes or until chicken is cooked

Ranch Pork Chops:
1.5 LBS baby potatoes cut into bite sized pieces
3 Large carrots cut into smaller pieces
4 TBS olive oil
2 tsp paprika
2 tsp oregano
Salt and pepper
1 tbs ranch dressing seasoning mix
5-1 inch thick pork chops
Place the potatoes and carrots on a baking tray drizzle with 2 tbs olive oil and season with 1 tsp paprika, 1 tsp oregano, and a dash of salt and pepper mix everything together bake on 400 degrees for 10-15 mins
Once out of the oven add the pork chops in the center and pour the remaining oil and seasoning on top bake for an additional 15-20 mins or until cooked

    I made the parmesan crusted chicken and baby red potatoes tonight and it was amazing. Whole family loved it. I used chicken thighs because that’s what I had and it was so good!

    And last night I made the broccoli beef and it was also super good! Used udon noodles. Yum yum!

    Made the ranch pork chops tonight! Delicious!! I cheated and used frozen veggies (carrots, broccoli, cauliflower and green beans) and cooked them for about 20 minutes on 400 with the pork chops and they came out amazing. Not overly soft but not still hard either, just the way I like them.
    I also made roasted hasselback potatoes which cooked for about 1/2 hour before I put the tray of pork chops and veggies in.

    Definitely will make again!

    I'm from Australia and we don't have ranch dressing seasoning mix here, anyone have ideas what i could use as a substitute? I really want to make the ranch pork chops also a ranch chicken and bacon pasta – julia's recipes. Maybe someone from the U.S would like to mail some to Aus and in return i could mail you something you would like from AUS ??? Reply if interested. Thanks in advance, Michelle
