Chicken Meat Loaf | Sanjeev Kapoor Khazana

Wholesome baked loaf loaded with chicken meat. A must try recipe !



250 grams chicken mince
1 slice brown bread
1 tablespoon oil + for greasing
½ cup milk
1 medium onion, finely chopped
1 tablespoon chopped garlic
1 small carrot, finely chopped
½ medium green capsicum, finely chopped
1 teaspoon dried oregano
Crushed black peppercorns to taste
1 tablespoon Worcestershire sauce
1 tablespoon tomato ketchup
Salt to taste
1 egg white
1 tablespoon butter
½ medium onion, finely chopped
8-10 button mushrooms, sliced
Crushed black peppercorns to taste
Salt to taste
1 cup chicken stock
1 tablespoon cornstarch


1. Preheat oven at 180ºC. Grease a loaf tin with some oil.
2. Take chicken mince in a bowl.
3. Soak bread slice in some milk for 5 minutes.
4. Heat oil in a non-stick pan. Add onion and sauté till golden. Add garlic and sauté on low heat for 30 seconds.
5. Add carrot, mix and cook for a minute. Add capsicum, mix and cook for a minute. Remove from heat.
6. Squeeze out milk from the bread, add the bread to the chicken and mix well. Add dried oregano, crushed peppercorns, Worcestershiresauce, tomato ketchup and salt and mix well. Add egg white and mix again.
7. Add sautéed vegetables to chicken and mix well.
8. Put the prepared chicken mixture into the greased loaf tin and level it out. Cover the loaf tin with aluminum foil.
9. Place the loaf tin on a baking tray, put the tray in preheated oven and bake for 30-40 minutes. Remove from heat and cool.
10. To prepare sauce, heat butter in a non-stick pan. Add onion and sauté till golden. Add button mushrooms and sauté for 1-2 minutes. Add crushed peppercorns and salt and mix well. Add chicken stock, mix and cook on low heat for 5-6 minutes.
11. Dissolve cornstarch in some water to make a smooth slurry, add to the pan, mix and cook till the sauce thickens.
12. Demould the baked meat loaf and place it on a serving plate. Slice. Pour the prepared sauce in a jar and drizzle the sauce over the meat loaf.Serve immediately.

Very good recipe of meatloaf made with chicken for my family and many other people who are forbidden to eat beef for religious reason.Btw, since beef is off the table in our house, I've forgotten how a hamburger tastes like now. Usually a traditional American meatloaf is smeared witn tomato ketchup on the exterior before baking, but this isn't. That's the only thing that I can't get used to, other than that, this recipe is great.

Making loaf is good but while watching it seemed to b lacking some indian touch flavours, well i will make it for sure but with my masalaz , anyways thx for this idea of loaf
