Vegetable Stock (1st Recipe) Can be made 4 days ahead

INGREDIENTS

1tbs olive oil
2 medium onions, peeled, cut into 1-inch pieces
8 celery stalks, cut into 1-inch pieces
3 large carrots, peeled, cut into 1-inch pieces
1 head of garlic cut in half
6 sprigs parsley rough cut
2 bay leaf
1 teaspoon whole black peppercorns

Green Pea Risotto (2nd Recipe)

INGREDIENTS

1 litre housemade vegetable stock
25 tablespoon butter
1 cup onion, finely chopped
3 garlic clove crushed
1 sprig fresh rosemary
400g risotto rice (Arborio Rice)
150 ml white wine (optional)
200g frozen peas
Salt freshly ground black pepper
75g Parmesan cheese, freshly grated

Pan-Seared Salmon with Lemon-Garlic Butter (3rd Recipe)

INGREDIENTS

1 Large Skinless salmon fillets (cut into 5 oz steaks)
2tbs Olive oil
2tbc Butter
2 cloves of Garlic (Crushed)
2tbs finely chopped parsley
lemon juice from 1 lemon
Salt and freshly ground black pepper
