5 QUICK & EASY PASTA DISHES | VEGETARIAN RECIPES

Hey guys!

I hope you are all doing well. Welcome back to my channel and to a long overdue video. I have filmed my favourite 5 pasta recipes for you guys to make along at home. The recipes are super easy and only require a handful of ingredients.

RECIPES:
Spicy Roasted Aubergine Pasta:
1 medium aubergine
1 white onion
3 cloves of garlic
150g chestnut mushrooms
3 spring onions
1 red chilli
300g fusili pasta
2 tbsp ricotta
50g vegetarian parmesan

Butternut Squash Mac n Cheese:
500g butternut squash
300g pennette (or other small, short pasta)
4 tbsp soft unsalted butter
3 tsbp plain flour
500ml full fat milk
1tsp english mustard
ΒΌ tsp paprika (plus another quarter teaspoon to sprinkle on top)
75g feta cheese
125g mature cheddar (plus 25g/quarter cup to sprinkle on top)
4 fresh sage leaves
salt & pepper

Creamy Cavolo Nero Pasta:
75g paccheri rigati pasta tubes
2 tsp olive oil
2 garlic cloves
3 spring onions
80g cavolo nero (can use swiss chard)
1/2 unwaxed lemon juice and zest
5 tbsp creme fraiche
pinch of nutmeg
30g rocket
10g pine nuts

Sweet Leek Carbonara:
2 large leeks
4 cloves of garlic
4 sprigs of fresh thyme
1 knob of unsalted butter
olive oil
300g dried spaghetti
50g Parmesan or pecorino cheese , plus extra to serve
1 large free-range egg

Courgette Pesto Pasta:
3 courgettes
300g dried rigatoni
100g cherry tomatoes
1 lemon (zest)
2 tsp pesto
2 garlic cloves
50g rocket
2 tbsp creme fraiche
50g vegetarian parmesan

πŸ’• fabulous recipes Luke, my heart was in my mouth every time you balanced something on the edge of the bench next to the hob it was the chilli flakes and then the bottle of oil 😲. A tip for if you ever did spill oil on the floor, Chuck some flour down onto the oil it’s much easier to clean up 😊. I’m sure you’ll never need that tip though 😊. πŸ’•

You said Vegetarian Parmesan. Is there a difference to regular parmesan?

My favorite aubergine dish is my variation of Mark Bittman's Pasta alla Norma My Way (Google, it's a NYTimes recipe). My changes to his recipe: I roast the aubergine and tomatoes (very much like you did). I use glass baking dishes to roast them in, but that may not be necessary but I always heard not to use metal dishes with aubergine or tomatoes. In a separate glass baking dish, I roast the cherry tomatoes with a lot of olive oil (be generous, this makes your sauce), garlic, thyme, salt and pepper, until they burst. When I combine it all with the pasta, I use good crumbled feta because my store doesn't carry ricotta salata (which is very different than plain ricotta. I love the tang the Feta adds and don't think regular ricotta is a good sub). I add A LOT more fresh basil than he calls for, which is already a lot. (Maybe 20 leaves of fresh basil, chiffonaded, just for my serving) In effort, this is about 10 minutes, or less, and it is my favorite pasta, not just my favorite aubergine pasta, but favorite of all.

I used a vegetarian recipe book tonight and made spicy, eggplant and penne pasta for supper tonight. You my dear Luke inspired me to go outside my comfort zone. If I knew how to add a photo I would attach one here on YouTube 😘

Hi Luke hope your well lovely recipes πŸ˜€! I'm not vegetarian but I think I'm going to try some of these recipes as it doesn't look as if I'll miss any meat so that's got to be good right ? Might I ask which sort of knife do you think is the sharpest I've bought loads and none of them seem very good even when I've paid a lot for them I've not bought the cheapest by any means but frankly they are all rubbish as I say I'm not vegetarian and I'm sorry to ask you this but sometimes I need a good knife for a carvary especially at Christmas . Thank you for your help sorry to be a pest sending lots of love x keep the videos coming xx

These look yummy, although parmesan isn't vegetarian, but vegetarian hard cheeses are just as good so easily swapped.
